Old Fashioned Carrot Cupcakes

This recipe includes more of carrots instead of the spice.

Cooking Time: 2 hours.

Yield: 15.

List of Ingredients:

Sugar- 2 cups

Oil- ¾ cup

Eggs- 3

Vanilla extract- 1 tsp.

Buttermilk- ¾ cup

Grated carrots- 2 cups

Flaked coconut- 1 cup

Crushed pineapple- 1 can

Flour- 2 cups

Baking soda- 2 tsp.

Cinnamon- 2 tsp.

Salt- 1 ½ tsp.

Walnuts- 1 cup

Butter- ½ cup

Cream cheese- 8 ounce

Vanilla extract-1 tsp.

Confectioner’s sugar- 4 cups

Instructions:

Preheat your oven at 350 degrees Fahrenheit.

In a bowl, add the sugar, oil, eggs, vanilla extract, buttermilk, grated carrots, flaked coconut and the crushed pineapple and mix.

Now add the dry ingredients i.e. flour, baking soda, cinnamon, salt and the walnuts.

Mix and pour the batter in prepared muffin cases and put to bake for 20 minutes.

For the frosting, in a bowl, mix the butter, cream cheese, vanilla extract and the confectioner’s sugar.

Frost the cupcakes once cooled.
